I recently joined a bible study with a group of sweet ladies from my church. We just finished a great study titled “What Is Love, The Letters of 1, 2, 3 John” from Kelly Minter. Throughout the book, Kelly shares several delicious recipes and I knew wanted to share a few of them with our group.

On page 64, Kelly shares a Black Bean and Chicken Chili recipe that piqued the group’s interest. One Sunday after church, I found some leftover rotisserie chicken and some beautiful red, yellow, and orange bell peppers. I poked around the pantry and found some ingredients Kelly included in her recipe but I was short a few things.
Easy Instant Pot Chili Recipe
I decided to substitute a few items from my pantry for what I was lacking in Kelly’s recipe. What I came up with was my humble attempt at her masterpiece. What To Serve With White Chicken Chili
I have to tell you, this is probably the best white chicken chili I have ever made! The ladies in my bible study loved it and my family did as well! I usually make my white chicken while with white beans but the seasoned black beans we used really amped up the flavor! We topped ours with sour cream, cheese, and fresh cilantro and scooped it up with tortilla chips. My kids crumbled the tortilla chips on top and made it a crunchy soup. Either way…Yummy!
Ingredients for your Instant Pot white chicken chili with black beans and corn recipe:
• 4 cups cooked Rotisserie chicken, cut into 1” pieces
• 2 tablespoons coconut oil
• 1 small yellow onion, diced
• 1 yellow, red, and orange bell pepper, seeded and diced
• 4 cups chicken stock
• 6 ounces tomato paste
• 10 ounce can tomato sauce
• 1-14.5 ounce can diced tomatoes with green chilies
• 1–15-ounce cans of spicy seasoned black beans, rinsed
• 1-15 ounce can of sweet whole kernel corn
• 2 tablespoons taco seasonings
• 1 teaspoon pepper
• 1 teaspoon salt
How to make this easy white chicken chili with black beans:
Steps 1-3: Set Instant Pot to sauté function. Add coconut oil. Once it melts and begins to sizzle, add onions and peppers and cook for 2 minutes or until onions are translucent and peppers begin to slightly soften, stirring occasionally.
Step 4: Add in the chicken, tomato sauce, and seasonings.
Step 5: Add in the chicken stock and tomato sauce. Stir to combine.
Step 6: Add in the diced tomatoes, corn, black beans. Stir to combine.
Steps 7-8: Set Instant Pot to manual for 5 minutes. Make sure venting is turned off and close the lid. Allow pressure to release naturally for 5 minutes. Release remainder of pressure by venting Instant Pot. Stir to combine.
Garnish with your favorite toppings like sour cream, shredded cheese, and fresh chopped cilantro. Serves 6-8
