Red Velvet Cupcakes From Scratch… or Not!
Do you want to win “Best in Show”? Well, then these cupcakes are for you. I made this red velvet cupcake recipe without buttermilk or sour cream and had a blast! But if that seems too daunting a task, you can always make these cupcakes from a cake mix box and make the frosting from scratch.
Cruella de Vil is an Evil Woman

Cupcake Ingredients:
• 2 ½ cups all-purpose flour
• 1 ½ teaspoon baking soda
• ¼ cup dark cocoa powder
• ½ teaspoon sea salt
• 1 ½ cups sugar
• 1 1/2 cups butter, room temperature
• 2 large eggs, room temperature
• ¼ cup chocolate yogurt
• 1 cup heavy whipping cream
• 1 teaspoon cocoa extract
• 3 teaspoons red gel food coloring
Frosting Ingredients
• 2 sticks (1 cup) Irish butter, room temperature
• 4 cups confectioners’ sugar
• 3 tablespoons Irish Cream flavored coffee creamer
• ½ teaspoon sea salt
• Black sugar pearls
Directions for the Red Velvet Cupcakes:
Step 1: Preheat oven to 350 degrees. Line a 12-cup muffin pan with baking liners. In a large mixing bowl, add flour, baking soda, baking powder, salt, and cocoa powder.
Step 2: Sift together and set aside.
Step 3: In a separate bowl, add butter and mix on low for 1 minute or until creamy. Add in the sugar and mix for 30 seconds to one minute, or until light and fluffy. Slowly add in the eggs, cream, yogurt, and cocoa extract and mix for an added 30 seconds.
Step 4. Slowly add the wet mixture into the dry mixture. Mix on medium until well incorporated. Add 1-2 teaspoons of red food coloring.
Step 5: Fill each muffin cup 2/3 of the way with batter. Bake 18-20 minutes or until it springs back when touched.
Step 6: Remove from oven and allow to cool for 10 minutes. Remove cupcakes from pan and place on a wire rack until completely cooled.
Directions for the Homemade Irish Buttercream Frosting:
Step 1: In a large mixing bowl or stand mixer, beat butter for 1-2 minutes, or until creamy. Add in the salt.
Step 2: Slowly mix in the powdered sugar, 1 cup at a time, alternating 1 tablespoon of creamer until creamy, light, and fluffy and it forms stiff peaks.
Step 3: Place in a piping bag and frost cupcakes.
Step 4: Add the black color pearls for your Dalmatian spots.
