Make-Ahead Breakfast Muffins
I am one of those people who want to be on time but am almost always late. When the kids were in school, this was painfully obvious to the school bus driver and the teachers! We missed the bus so often I ended up driving them from about 4th grade on (cringe). Because we knew we’d not make it on time for the kids to eat the school breakfast, I learned to find make-ahead breakfast muffins recipes. What a lifesaver!

How To Make Muffins Ahead Of Time
What is great about any recipe with make-ahead breakfast muffins to freeze is they have a basic foundation to build from. Once you have that, you can add your favorite ingredients from week to week and you are golden! In our house, the basic muffin recipe we use starts with a simple egg and sausage recipe. From there, the kids can decide what ingredients they want me to add each week for their breakfast muffins.
Ingredients for your easy make-ahead breakfast muffins:
• 4-5 bagels of your choice, cut into cubes
• 1 pound of ground sausage, browned until no longer pink
• 4 tablespoons half and half
• 10 large eggs
• 1 teaspoon salt
• 1 teaspoon pepper
• 2 tablespoons Everything Bagels Seasoning, divided
• 4 ounces of cream cheese, diced
• 4 ounces shredded swiss cheese
• 4 ounces shredded cheddar cheese
• Chives for garnish if desired
How to make your Freezer-Friendly Everything Bagel Breakfast Muffins:
Preheat oven to 350 degrees. Spray a 12-cup muffin pan
Step 1: In a large mixing bowl, whisk together the half and half and eggs.
Step 2: Add in the salt, pepper, and 1 tablespoon of Everything Bagels Seasoning. Set aside.
Step 3: Put all ingredients together, as if to make an assembly line.
Step 4: Layer each muffin cup as follows: 3-4 bagel cubes, sausage, 4-5 pieces of cream cheese, a sprinkle of the swiss, and then cheddar cheese. Now add the egg mixture to about halfway. Now add 4-5 bagel cubes and a bit more sausage and sprinkle remaining Everything Bagel Seasoning over each.
Steps 5-6: Place in oven and bake for 45-55 minutes, or until browned and the muffins are no longer soft in the middle. If you like yours more browned, you can place them under the broiler for 2-3 minutes (but keep an eye on them so they don’. Remove from oven and cool. Top with a sprinkle of the everything bagel seasoning.
