Description
This Freezer-Friendly Everything Bagel Breakfast Muffins Recipe is as yummy fresh as are when they’re re-heated!
Ingredients
4–5 bagels of your choice, cut into cubes
• 1 pound of ground sausage, browned until no longer pink
• 2 cups half and half
• 10 large eggs
• 1 teaspoon salt
• 1 teaspoon pepper
• 2 tablespoons Everything Bagels Seasoning, divided
• 4 ounces of cream cheese, diced
• 4 ounces shredded swiss cheese
• 4 ounces shredded cheddar cheese
Instructions
Preheat oven to 350 degrees. Spray a 12-cup muffin pan
Step 1: In a large mixing bowl, whisk together the half and half and eggs.
Step 2: Add in the salt, pepper and 1 tablespoon of Everything Bagels Seasoning. Set aside.
Step 3: Put all ingredients together, as if to make an assembly line.
Step 4: Layer each muffin cup as follows: 3-4 bagel cubes, sausage, 4-5 pieces of cream cheese, a sprinkle of the swiss, and then cheddar cheese. Now add the egg mixture to about halfway. Now add 4-5 bagel cubes and a bit more sausage and sprinkle remaining Everything Bagels Seasoning over each.
Step 5: Place in oven and bake for 45-55 minutes, or until browned and the muffins are no longer soft in the middle. If you like yours more browned, you can place them under the broiler for 2-3 minutes (but keep an eye on them so they don’t burn.
Step 6: Remove from oven and cool. Top with a sprinkle of the everything bagel seasoning.
Notes
If you aren’t an everything bagel kind of person, you can sub any flavor bagel you like and leave off the seasonings and still get a flavorful breakfast muffin!
