Instant Pot Vegetable Soup Recipes
Because we do eat a lot of soup recipes, we keep several basic ingredients on hand for my low energy “soup days.” If you looked into our freezer you would understand why we make a ton of Instant Pot vegetable soup recipes with frozen vegetables! They are one of the cheapest and most nutritious recipes you can make for your family and if need be, you can add any protein you want. Even my husband and kids have learned how to make these recipes. Now that is a testimony in itself guys!
Instant Pot Soup Recipe Ingredients:
• 1 tablespoon butter
• 2 tablespoons chopped garlic
• 1 tablespoon Worcestershire sauce
• 3-4 cups beef broth
• 1 small can of tomato paste
• 1 large can of diced tomatoes
• 1 large can of tomato sauce
• 1 small can of sliced jalapenos
• 1 tablespoon Italian seasoning
• 1 tablespoon onion powder
• 1 bag of frozen meatballs
• 1 small bag of petite potatoes, sliced in quarters
• 1 bag of frozen mixed vegetables
• Shredded cheddar cheese if desired
• Salt and pepper to taste
Instant Pot Meatball Soup Recipe Instructions:
Step 1: Set Instant Pot to sauté/browning feature. Add butter and allow to sizzle. Add garlic and cook for 1 minute, stirring occasionally.
Step 2: Add beef broth and Worcestershire sauce, tomato paste, tomato sauce, diced tomatoes, and jalapenos.
Step 3: Add onion powder, Italian seasoning, and meatballs.
Step 4: Add potatoes
Step 5: Add frozen vegetables and stir.
Step 6: Lock the Instant Pot lid and make sure it is not on venting. Set to high pressure and cook for 8 minutes. Vent naturally and stir. Add shredded cheese if desired. Serve and enjoy.
