Eggnog is a holiday staple at our house. A few years ago I made pancakes with eggnog and they were so good ! I found myself thinking about else I could make with eggnog as the star ingredient long after the winter holidays had passed.

For a few weeks now, I have been wondering why we only drink eggnog during the winter holidays and craving it when it was no longer available. What I came up with is Spiced Rum Eggnog Cupcakes With Dark Chocolate Espresso Frosting.

Nutmeg, cinnamon and vanilla always make me think of the holidays. Added to the unique flavor of eggnog, the cupcakes have the perfect mix of sweet and spicy for an adult palate.

The recipe doesn’t use too much alcohol, only a 1/4 cup of rum. You don’t have to worry about anyone getting intoxicated from the cupcakes! The baking process takes care of the alcohol.

With the baking process comes a flavor that becomes deeper and warmer. It compliments the spices of the cupcake beautifully. I highly recommend using dark rum. It has a more distinctive, bold flavor.

Cupcake Ingredients:

1.5 cups flour
1 cup granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon allspice
2 eggs, room temperature
1/4 cup vegetable oil
1/4 cup spiced rum
3/4 cup eggnog, room temperature
1/4 cup sour cream

Frosting Ingredients:

3 cups confectioners’ sugar
1 tablespoon espresso powder or coffee
2 tablespoons cocoa powder
2 sticks room temperature unsalted butter
1 tablespoon spiced rum
1 teaspoon vanilla extract
1-2 teaspoons milk, if needed
Chocolate sprinkles for decoration if desired

Directions for Cupcakes:

Spiced Rum Eggnog Cupcakes Step 1

Step 1: Preheat oven to 350 degrees. Line a 12-cup muffin pan with baking liners.
In a large mixing bowl, add flour, baking powder, baking soda, salt and allspice.

Step 2: Whisk dry ingredients together.

Step 3: In a small bowl, add eggs, sugar, rum, vegetable oil and butter. Mix on medium speed for 2 minutes.

Step 4: Add small bowl ingredients into the dry ingredients. Fold in with spatula.

Step 5: Layer each muffin cup 2/3 of the way with batter. Bake 18-20 minutes or until it springs back when touched. Let cool.

Directions for Frosting:

Step 1: Add powdered sugar, espresso powder and cocoa powder to a large mixing bowl and whisk together.

Step 2: Add in butter and mix for 1 minute or until creamy. Mix in the rum and vanilla extract until light and fluffy. If mixture is too thick, add a bit of milk.

Step 3: Add frosting to piping bag.

Step 4: Frost cupcakes and decorate with chocolate sprinkles if desired.

Ingredients
  

  • 1.5 cups flour
  • 1 cup granulated sugar

Instructions
 

  • Preheat oven to 375°.In a large bowl, flour, baking powder, nutmeg, cinnamon and salt.

  • Whisk dry ingredients together
  • In a separate bowl, add eggs, sugar, rum, vegetable oil, eggnog, sour cream and butter. Mix on medium
    speed for 2 minutes.

  • Combine wet and dry ingredients until ingredients are well incorporated.
  • Fill each muffin tin with batter until about 2/3 full. Bake for 14-16 minute until toothpick comes out clean. Allow to cool completely.
  • Cream together butter, shortening, vanilla and creamer. Mix in cocoa powder, coffee and powdered sugar on medium speed until well combined.
  • Add in one teaspoon of additional creamer if needed to smooth out frosting.
  • Add frosting to piping bag. Frost cupcakes and decorate with chocolate sprinkles
    if desired.
